The first category, raw food, including all types of food that have been frozen in raw and cooked conditions. This includes fish, meat, poultry, vegetables, mushrooms, fruit, dough, and fruit juice.
The second category, breaded raw foods, including meat, poultry, fish, vegetables, mushrooms and anything that has been prepared to be cooked.
The third category, pre-cooked food, includes everything that has been fully cooked, meaning that before it is frozen, it is completely cooked and ready to eat and then frozen.
These may include breaded poultry pieces, szitzel, cordon bleu, chicken kiev, sauteed dishes, oven dinners or other types of food.
It is very important to melt all meat and poultry in cold conditions until the meat is thawed. Never melt all types of meat in water and it is not recommended to melt them in a microwave oven.
The reason for this is that it will take a long time to melt the meat and the area in the first thawed meat will not be hot enough to prevent bacterial development because the frozen center stores thawed meat at a moderate temperature that is optimal for long-term bacterial development.
Therefore, the risk of food contamination is very high.
